Chili is always an excellent meal in the winter. This large pot of chill can serve 2 people for 2-3 days for lunch and dinner. I use turkey, but it can be replaced with chicken or beef.
4-5 turkey steaks, or turkey mince
2 peppers (red and green)
1 can of peeled whole tomatoes
2 chopped fresh tomatoes
2 cloves of garlic peeled and minced
1 1/2 cup (12 oz, 350 ml) of chicken, beef, turkey or veg stock
1 can of red kidney beans drained
1/4 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp cumin
1/2 tsp salt
4 tbsp chill powder
2 scallions chopped (garnish on top)
Chop the onion, peppers and tomato. Add to a pot with olive oil on medium heat. Slice turkey into smaller pieces, brown the turkey. Add the garlic and stock. Add the can of tomato sauce. Add the kidney beans drained. Last, stir in the spices and let simmer on low-medium for an hour.
Options: cheese, sour cream, avocado on top
*Can add crushed up corn tortilla chips for extra crunch
