Apple, Cardamom & Poppyseed Vegan Spelt Cake

A remake of a classic Washington Apple cake:

Perfect treat for the autumn time with 
cinnamon and cardamom spice to compliment
​the apple flavor.

Ingredients:

• 2 diced apples (2 cups)
• 1/2 lemon squeezed
• 2 1/2 cups of spelt flour/ gluten free flour
• 1 tbsp baking powder
• 2 tsp cinnamon
• 1 1/2 tsp cardamom
• 1/2 cup monkfruit powder
• 1 tsp vanilla
• 2 eggs or egg replacements (chia, flax)
• 1/4 cup oat milk/ almond milk/ coconut milk

Directions:

• Preheat the oven to 200°C/40o°F
• Chop the apples and squeeze the lemon over them.
• Mix all of the dry ingredients together then stir in the wet ingredients and apples.
• Place in a round cake pan lined with parchment paper, bake for 20 minutes.
• Remove from the oven and let cool. Serve with dairy free ice cream or vegan caramel on top.
