For my monthly cheat, I made nachos with half sheep's milk cheese and half goat's cheese. The goats cheese was hard and aged about 1 year. Both had similar tastes, not too sweet, not too pungent. I wanted to have them as close to cheddar as possible. Before consuming, I had 2 super lactase enzyme pills and maintained my daily intake of probiotics. I kept my serving relatively small and avoided the pieces with the most cheese on them.

Another option for a cheat is Feta Cheese. In small doses on occasion it is ok with my stomach.
Feta cheese is wonderful on salads. It can range from a mix of sheep and goat cheese, but often it varies so read the label. Greek brands are probably the most reliable. This one was about €4 at Fallon and Byrne on Exchequer Street.
Again, everyones intolerance varies. I was tested for goat and sheep milk, and my reaction was less than half of that to cows milk.
